Line Cook

Brugada Kitchen & Bar is a scratch modern American restaurant in downtown Nashville, one block off Broadway, running dinner service Tuesday through Sunday, weekend brunch, late-night covers on Friday and Saturday, and a steady private-events calendar. We are looking for a reliable, composed line cook to join a kitchen that values consistency and genuine craft over flash. If you execute clean food under real pressure and want to grow in a high-volume downtown environment, we want to hear from you.

• Work grill, sauté, and garde manger stations across dinner and brunch services.
• Execute scratch Modern American plates to spec, maintaining consistency through high-volume covers.
• Support private events and large-party dining in coordination with the kitchen team.
• Maintain your station — setup, breakdown, sanitation, and organization — to line standards every shift.
• Follow all food safety and handling procedures in accordance with health code requirements.
• Communicate clearly with the expo line and fellow cooks to keep tickets moving efficiently.
• Report directly to the Kitchen Manager and Executive Chef, and take direction and feedback constructively.

• At least 1 year of line cook experience in a full-service kitchen — required.
• Demonstrated ability to work grill, sauté, or garde manger in a volume environment.
• Availability to work nights and weekends, including Friday and Saturday late-night service — required.
• Ability to work Tuesday through Sunday dinner service and Friday through Sunday brunch.
• ServSafe certification or a current food handler card — strongly preferred.
• Familiarity with Toast POS or comparable restaurant technology.
• Ability to stay calm, organized, and accurate during sustained high-volume rushes.

This is a full-time role covering dinner service Tuesday through Sunday (evening shifts beginning between 4:00 and 4:30 p.m.) and brunch service Friday through Sunday (shifts beginning at 10:00 a.m.). Friday and Saturday shifts extend into late night, with the kitchen supporting bar service through close. Nights and weekends are a firm requirement of this position.
